Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Chop the bacon into small, bite-sized pieces.
Trim the ends of the zucchini and grate.
Zest the lemon and cut into wedges.
Finely chop the basil, reserve some whole leaves for garnish.
Peel and mince the garlic.
2 Fry bacon
In a large pan over medium heat, fry the baconbits for 4-5 min until really crispy.
Remove from the pan and drain on a plate lined with paper towel.
Tip!Add the bacon to a cold pan and do not use oil - the fat from the bacon will melt as the pan heats up and provide enough oil for fyring.
3 Make orzo
Return the pan to a medium heat.
Add butter, garlic and orzo and fry for 1-2 min.
Stir well to coat the orzo in the garlicbutter.
Add the gratedzucchini, lemonzest, measuredwater, salt and pepper.
Gently cook for 5-7 min until orzo is tender and most of the liquid is absorbed.
Turn off the heat and stir through the spinach to wilt.
4 Prepare sauce
Meanwhile, grate the parmesan.
In a medium bowl, combine the parmesan (reserving some for garnishing) and egg.
Mix well.
5 Finish orzo
Add the parmesan and egg mixture to the pan with the orzo.
Continue to stir until the sauce thickens slightly and the whole pan becomes nice and creamy.
Add the crispy baconbits.
Add the chopped basil and a pinch of blackpepper.
Add a squeeze of lemonjuice to taste.
6 Serve
Serve the Lemony Orzo Carbonara topped with grated Parmesan and reserved basilleaves.
