Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Fry mince

1 Fry mince

  • Preheat the oven to 200°C/180°C fan.
  • Heat a large non-stick pan or pot over medium heat with a drizzle of oil.
  • Fry the onion and beef for 5-7 min or until browned.
  • Add the tomato paste, smoked paprika, taco seasoning (spicy!), brown sugar, and coriander cumin powder.
  • Fry for 1-2 min until fragrant.
  • Add the measured water, and cook for 3-4 min further.
Add veg

  • Meanwhile, drain and rinse the corn and black beans.
  • Add to the beef, then lower the heat, cover and cook for 2-3 min until the sauce has reduced and everything is cooked through.
  • Season with salt and pepper to taste.
Bake

3 Bake

  • Meanwhile, arrange the nachos on an oven-proof platter or rimmed baking tray layering with the beef mixture and grated orange cheddar.
  • Place in the oven to melt for 5-7 min.
Tip! Use a platter or tray that you could serve the nachos directly from!
Make guac

4 Make guac

  • Meanwhile, pick and chop the coriander.
  • Slice the lime in wedges.
  • Slice the avocado in half and remove the stone.
  • Scoop the flesh into a bowl and mash with a fork.
  • Squeeze some lime juice (to taste), add half the coriander, and a generous pinch of salt and pepper.
  • Mix and set aside.
Tip! Become an avocado ripening pro! If your avocado's still hard but you plan to use it the next day, put it in a brown paper bag with an apple or a banana to ripen it faster.

5 Serve

  • Serve the Loaded Cheesy Beef Nachos topped with guacamole, tomato salsa, and sour cream.
  • Garnish with the jalapenos (spicy!) and remaining coriander.
