Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep cardamom

1 Prep cardamom

  • Split the cardamom pods open with the back of a knife.
Tip! Splitting the cardamom pod cracks it open so the aromatic seeds are exposed, allowing their essential oils to infuse more fully and quickly into the milk.
Simmer pudding

2 Simmer pudding

  • In a small pot, add the milk, whipping cream, sugar, corn starch and cardamom pods.
  • Whisk until the sugar and corn starch is dissolved.
  • Place the pot over medium heat, whisking continuously for 4-5 min until starting to thicken.
  • Reduce the heat to low and continue whisking for 1-2 min further until thickened to a pudding consistency that coats the back of a spoon.
  • Remove from the heat.
  • Add the orange blossom water and whisk through.
Refrigerate

3 Refrigerate

  • Remove and discard the cardamom pods and any seeds.
  • Portion the creamy pudding into individual cups or glasses, as preferred.
  • Cover with cling film, ensuring the cling film touches the surface of the pudding to avoid forming a skin.
  • Refrigerate for 2-3 hours to set.
Tip! Discard the cardamom pods
Serve

4 Serve

  • When ready to serve, remove from the fridge and discard the cling film.
  • Serve the Mahalabia garnished with Sliced Pistachios.
  • Ramadan Mubarak!
