Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Trim the broccoli florets and cut into bite-sized pieces.
Peel and finely chop the onion.
Peel and finely chop the garlic.
Roughly chop the sundriedtomatoes.
Pick the basil leaves.
2 Prep chicken
Pat the chicken breasts dry with paper towel.
Slice each chicken breast in half as if you were cutting a burger bun, so you are left with two thinner chicken escalopes.
Season the chicken with salt and pepper.
Combine the flour and driedthyme on a plate.
Coat the chicken in the flour.
3 Fry chicken
Heat a large pan over a medium-high heat with a generous drizzle of olive oil.
Once hot, carefully add the coated chickenbreasts (in batches).
Fry for 2-3 min on either side or until golden and crispy.
Set aside on a plate.
Reserve the frying pan.
Tip!Avoid overcooking the chicken at this step as it will continue to cook in the cream sauce in step 5.
4 Boil pasta
Meanwhile, bring a large pot of salted water to a boil.
Add the linguine.
Cook for 12-15 min or until cooked to your liking.
During the last 5 min, add the broccoli.
Cook until blanched.
Drain and set aside.
5 Make sauce
Grate the parmesan and set aside.
Heat the reserved frying pan to medium heat with another drizzle of olive oil.
Fry the onion and garlic for 4-5 min until softened.
Add the tomatopaste, and sundriedtomato. Fry for 1 min.
Crumble 0.5 chickenstockcube, the measured water, and whisk in 100 of the cookingcream, and half the parmesan.
Return the chicken to the pan.
Gently cook for 3-4 min until the chicken is cooked through and the sauce is thickened.
Tear in some of the basil leaves.
6 Serve
Serve the "Marry Me" Chicken in Sundried Tomato Sauce with Linguine and Broccoli.
Pour that delicious creamsauce over each serving.
Serve with any extra parmesan on the side.
