Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil orzo
Bring a large pot of salted water to the boil.
Boil the orzo for 9-11 min, until tender.
Drain and return the orzo to the pot.
Zest the lemon and cut it into wedges.
Add the butter, lemonzest, a squeeze of lemonjuice and a pinch ofsalt and pepper.
Mix well and keep warm until serving.
2 Prep
Meanwhile, peel and chop the onions in half.
Finely chop half and finely slice the other half.
Peel and finely chop the garlic.
3 Fry lamb
Heat a large frying pan over a medium-high heat with a drizzle of oil.
Fry the chopped onion for 3-5 min until softened (reserving the sliced onion for garnish).
Add the lamb and garlic.
Fry for 4 min until starting to brown.
Add the lemonpepper, cumin, oregano, paprika and tomatopaste.
Mix well and cook for a further 2-4 min until fully cooked.
4 Make tzatziki
Meanwhile, grate the cucumber.
Using clean hands, over the sink, squeeze out as much water as possible and add to a bowl.
Pick and finely chop the mint (saving some leaves for garnish)
Add the yogurt and chopped mint to the cucumber.
Mix well and season with salt, pepper and a squeeze of lemonjuice to taste.
5 Prep toppings
Chop the cherrytomatoes and olives in half.
6 Serve
Serve the MediterraneanLambBowls with Orzo, Feta and Tzatziki.
Garnish with the remaining mintleaves.
