Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil orzo

1 Boil orzo

  • Bring a large pot of salted water to the boil.
  • Boil the orzo for 9-11 min, until tender.
  • Drain and return the orzo to the pot.
  • Zest the lemon and cut it into wedges.
  • Add the butter, lemon zest, a squeeze of lemon juice and a pinch ofsalt and pepper.
  • Mix well and keep warm until serving.

  • Meanwhile, peel and chop the onions in half.
  • Finely chop half and finely slice the other half.
  • Peel and finely chop the garlic.
Fry lamb

3 Fry lamb

  • Heat a large frying pan over a medium-high heat with a drizzle of oil.
  • Fry the chopped onion for 3-5 min until softened (reserving the sliced onion for garnish).
  • Add the lamb and garlic.
  • Fry for 4 min until starting to brown.
  • Add the lemon pepper, cumin, oregano, paprika and tomato paste.
  • Mix well and cook for a further 2-4 min until fully cooked.
Make tzatziki

4 Make tzatziki

  • Meanwhile, grate the cucumber.
  • Using clean hands, over the sink, squeeze out as much water as possible and add to a bowl.
  • Pick and finely chop the mint (saving some leaves for garnish)
  • Add the yogurt and chopped mint to the cucumber.
  • Mix well and season with salt, pepper and a squeeze of lemon juice to taste.

  • Chop the cherry tomatoes and olives in half.
Serve

6 Serve

  • Serve the Mediterranean Lamb Bowls with Orzo, Feta and Tzatziki.
  • Garnish with the remaining mint leaves.
