Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Boil a kettle of water.
Peel and chop the onion and garlic.
Peel and chop the carrot into bite-sized pieces.
Chop the celery and zucchini into bite-sized pieces.
Dissolve the stockcube in the boiled measuredwater to make the stock.
2 Start soup
Heat a large pot over medium heat with a drizzle of oil.
Fry the onion for 2-3 min until translucent.
Add the garlic, carrot, celery and zucchini. Fry for 1 min.
3 Simmer soup
Drain and rinse the white beans.
Add the cherry tomatoes, white beans, tomato paste and stock.
Add the vegetableseasoning and driedoregano.
Mix well.
4 Add pasta
Lower the heat to medium-low.
Add the macaroni, cover with a lid and cook for 10-12 min until pasta is cooked.
If soup thickens too much, add a splash of water and adjust seasoning to taste.
5 Serve
Pick and finely chop the parsleyleaves.
Serve the Minestrone Soup with a sprinkle of Fresh Parsley.
Add a crack of freshly ground black pepper.
