Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Boil a kettle of water.
  • Peel and chop the onion and garlic.
  • Peel and chop the carrot into bite-sized pieces.
  • Chop the celery and zucchini into bite-sized pieces.
  • Dissolve the stock cube in the boiled measured water to make the stock.
Start soup

2 Start soup

  • Heat a large pot over medium heat with a drizzle of oil.
  • Fry the onion for 2-3 min until translucent.
  • Add the garlic, carrot, celery and zucchini. Fry for 1 min.
Simmer soup

3 Simmer soup

  • Drain and rinse the white beans.
  • Add the cherry tomatoes, white beans, tomato paste and stock.
  • Add the vegetable seasoning.
  • Mix well.
Add pasta

4 Add pasta

  • Lower the heat to medium-low.
  • Add the macaroni, cover with a lid and cook for 10-12 min until pasta is cooked.
  • If soup thickens too much, add a splash of water and adjust seasoning to taste.
Serve

5 Serve

  • Pick and finely chop the parsley leaves.
  • Serve the Minestrone Soup with a sprinkle of Fresh Parsley.
  • Add a crack of freshly ground black pepper.
