Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Whip cream
Preheat the oven to 200°C/180°C fan.
In a large mixing bowl, add the cold whipping cream and icing sugar and beat or whisk for 1-2 min until the cream is thick, fluffy, with soft peaks.
Transfer to the freezer to chill well until the crumble is ready.
Tip!Soft peaks refers to a soft and smooth consistency achieved by whipping cream until it forms peaks that hold their shape when the whisk is lifted.
2 Prep filling
Peel the pear, slice in quarters, and remove the seeds. Then slice or chop into smaller pieces.
Trim and slice the strawberries in half.
Add the pear, strawberries, blueberries, white sugar, and corn starch to a 20cm baking dish.
Mix well and spread in an even layer.
3 Make crumble
Cut the butter into smaller pieces.
In a larger bowl, combine the butter, flour, oats, baking powder, brown sugar, and almond flakes.
Using the tips of your fingers (or a fork), press the butter and ingredients together until combined.
4 Combine
Spread the almond crumble mixture on top of the mixed fruit filling.
5 Bake
Bake in the center of the oven for 35-40 min or until the fruit is cooked and the almond crumble is golden brown.
The dish is ready when the berries have released their juices and are bubbly around the edges.
Set aside for 5 min to cool.
Tip!If the crumble is browning too quickly, cover with foil and continue to bake until the fruit is cooked through.
6 Serve
Serve the Mixed Berry and Almond Crumble warm with a dollop of chilled whipped cream.
