Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast potatoes
Soak the bamboo skewers in water.
Preheat oven to 200°C/180°C fan.
Chop the potatoes (skins on) into wedges.
Add to a baking tray with a drizzle of oil and potatoseasoning.
Roast for 30-35 min until golden and crisp.
2 Prep chicken
Meanwhile, peel and finely chop the garlic.
Slice the lemon in quarters.
Chop the chicken into smaller cubes.
In a bowl, combine the chicken, garlic, yogurt, tomatopaste, paprika, coriandercuminpowder, turmeric, salt and pepper, and a good squeeze of lemon, reserving the rest for the salad.
Thread onto skewers, and set aside to marinate.
3 Form lamb kebabs
Peel and finely grate half the onion, reserving the other half for the salad.
Pick and finely chop the parsley.
In a bowl, combine the lambmince, arabicmixmasala, onion, parsley, panko, a drizzle of olive oil, and a pinch of salt and pepper.
With clean hands, knead until all the ingredients are fully combined. Divide the mixture and shape into long kebabs.
Tip!Coat your hands in oil or water before shaping the kebab; this way the mixture won't stick.
4 Grill
When potatoes are done, transfer them to a plate.
Place a grill rack on top of the baking tray.
Increase the oven temp to grill / high.
Roast the chickenskewers for 10 min, then add the lamb kebabs, and roast for an additional 6-8 min until cooked through.
Tip!If you don't have a grill rack, add the chicken and lamb directly onto the baking pan.
5 Make salad
Meanwhile, chop the cucumber and remaining onion into half moons.
Slice the tomato into wedges.
Pick the mint.
In a bowl, combine the vegetables with a small drizzle of olive oil, sumac, a pinch of salt and pepper, and a squeeze of lemon.
6 Serve
Warm the arabicflatbread in the oven or microwave, and slice in half or quarters.
Divide the Chicken Shish Tawook and Lamb Kebabs with Roasted Potatoes, Hummus and Salad on the side, with a drizzle of pomegranatemolasses.
