Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

Preheat the oven to 200°C/180°C fan. In a large bowl, combine the chicken and pesto with a pinch of salt and pepper to taste. Slice the zucchini into half moons.
Bake

2 Bake

Place the zucchini, tomatoes, a drizzle of oil, the garlic onion powder, salt and dried oregano onto a baking tray and mix. Place the pesto chicken next to the vegetables and roast for 10 min.
Add mozzarella

3 Add mozzarella

After 10 min, add the mozzarella onto the chicken and bake for an additional 3-5 min or until the cheese turns golden brown and the chicken is cooked through.
Tip! To check if the chicken is cooked, insert a knife into the meat - if the juices run clear, it's ready.
Pick basil

4 Pick basil

Meanwhile, pick the basil leaves and discard the stems.
Serve

5 Serve

Divide the zucchini, tomatoes and pesto chicken among plates. Top with the basil leaves.
