Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat the oven to 200°C/180°C fan.
In a large bowl, combine the chicken and pesto with a pinch of salt and pepper to taste.
Slice the zucchini into half moons.
2 Bake
Place the zucchini, tomatoes, a drizzle of oil, the garliconionpowder, salt and driedoregano onto a baking tray and mix.
Place the pestochicken next to the vegetables.
Roast for 10 min.
3 Add mozzarella
After 10 min, add the mozzarella onto the chicken.
Bake for an additional 3-5 min or until the cheese turns golden brown and the chicken is cooked through.
Tip!To check if the chicken is cooked, insert a knife into the meat - if the juices run clear, it's ready.
4 Pick basil
Meanwhile, pick the basil leaves and discard the stems.
5 Serve
Serve the Mozzarella and Pesto Baked Chicken with Roasted Vegetables.
Top with the basil leaves.
