Instructions

Make chia pudding

1 Make chia pudding

  • In a large bowl, combine the chia seeds, agave syrup and light coconut milk.
  • Leave the chia pudding in the mixing bowl or portion into individual containers.
Refrigerate

2 Refrigerate

  • Cover the chia pudding with a lid or cling film.
  • Place into the fridge and leave to set overnight.
Tip! Strapped for time? Leave to set for a minimum of 2 hours before consuming.
Prep topping

3 Prep topping

  • Cut the passionfruits in half.
  • In a small bowl, combine the passionfruit pulp and apricot jam until smooth.
Toast coconut

4 Toast coconut

  • Toast the coconut flakes in a hot, dry pan for 1-2 min or until starting to brown.
Tip! Strapped for time? The coconut flakes can be eaten without toasting too.
Serve

5 Serve

  • Serve the Overnight Coconut Chia Pudding with a dollop of yogurt, a drizzle of the Passionfruit and a sprinkling of Toasted Coconut Flakes.
Tip! Store in an airtight container in the fridge and consume within 2 days.
