Instructions
1 Coat chicken
Preheat the oven to 200°C/180°C fan.
Cut the chicken breast into strips.
Add the mayonnaise to a medium sized bowl.
Mix in half of the herbmix (reserving the rest for the pizza dip).
Toss to coat the chicken in the mayonnaise.
2 Crumb chicken
Combine the panko bread crumbs and grated Parmesan on a plate.
Coat the chicken in the pankomix, pressing firmly to adhere it to the surface.
Transfer the coated chickentenders to a lined baking tray.
3 Bake
Drizzle or spray the chickentenders with oil.
Bake in the oven for 15-18 min until golden and crispy and the chicken is cooked.
Tip!Alternatively, place in a preheated air fryer at 180°C for 10-12 min.
4 Make pizza dip
Meanwhile, add the tomato passata and remaining herbmix to a small pot with a pinch of salt.
Warm over a low heat for 2-3 min, stirring, until hot.
Set aside to cool down.
5 Prep sides
Cut the cucumber into thin batons.
Wash the green grapes. For younger kids, cut the grapes in half or quarters.
6 Serve
Serve the Parmesan Crumbed Crispy Chicken Tenders with the pizza dip to dunk.
Add the cucumber and green grapes.
