Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Start mash
Preheat the oven to 200°C/180°C fan.
Bring a large pot of salted water to the boil.
Peel and chop the sweetpotatoes into bite-sized pieces.
Add them to the pot of salted boiling water and cook over a medium-high heat for 15 min or until soft.
2 Prep
Meanwhile, separate the broccoli into small florets and chop them into bite-sized pieces.
In a large bowl, combine the panko, greenpesto, a drizzle of oliveoil with a pinch of salt and pepper to taste - this is your pestocrumb.
3 Prep chicken
Slice each chicken breast in half as if you were cutting a burger bun, making sure not to cut through entirely until the chicken breast is one larger and thinner piece.
Place the chicken onto one side of a baking tray and evenly top with the pestocrumb.
4 Bake
Add the broccoli alongside the chicken.
Drizzle the broccoli with oil and season with salt and pepper to taste.
Bake in the oven for 15-20 min or until the chicken is cooked through, the crumb is golden brown, and the broccoli is tender.
Tip!To check if the chicken is cooked, insert a knife into the meat - if the juices run clear, it's ready.
5 Finish mash
Meanwhile, once soft, drain the sweet potatoes and return them to the pot.
Add the butter and mash until smooth.
Season with salt and pepper to taste.
6 Serve
Serve the PestoCrustedChicken with RoastedBroccoli and SweetPotato Mash.
