Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat the oven to 200°C/180°C fan. Peel and finely slice the onions. Deseed and slice the green peppers into thin strips.
2 Fry
Heat a pan over a medium-high heat with a drizzle of oil. Once hot, add the onion and greenpepper with a pinch of salt and fry for 5-7 min until softened. Add the fajitaseasoning, half the dried thyme and fry for 1 min further. Add the pulled beef and fry for 3-4 min until cooked through, adding a splash of water in between to keep it tender.
3 Toast panini bread
Meanwhile, line a baking tray with parchment paper. Slice the panini in half, and brush with some olive oil on top. Sprinkle over the remaining driedthyme. Toast in the oven for 5-6 min until golden, then top with the pulledbeef and gratedmozzarella cheese. Bake for another 3-4 min until the cheese has melted.
4 Prep salad
Meanwhile, cut the iceberglettuce into quarter wedges. Finely chop the tomatoes into bite-sized pieces. Finely chop the chives.
Tip!If cooking for 2, you can use just one half of the iceberg lettuce and save the other half for another time.
5 Make salad dressing
Finely chop the jalapenoslices. In a bowl, combine the jalapeno, sourcream, white balsamic vinegar, oliveoil, garliconionpowder, chives, and smoked sea salt to taste . Mix well, and add a splash of water to thin out the dressing slightly to your liking.
6 Serve
Cut the sandwiches in half and divide amongst plates with an iceberg wedge. Pour some salad dressing over the wedge. Top with the chopped tomatoes, and freshly ground blackpepper.
