Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Bake fries

1 Bake fries

Preheat the oven to 200°C/180°C fan. Slice the potatoes (skins on) into fries. Add the fries onto a lined baking tray with a drizzle of oil and a generous pinch of salt. Toss the fries in the oil until they are fully coated. Roast for 30 min or until golden and crisp.
Bake tofu

2 Bake tofu

Meanwhile, drain and grate the tofu. Place the grated tofu onto a second lined baking tray. Add the soy sauce, garlic onion powder and a generous pinch of salt. Mix to coat. Bake for 15 min until the tofu browns slightly.
Tip! Use a box grater for the best results.
Make sauce

3 Make sauce

Meanwhile, heat a large pan over a medium heat with a drizzle of oil. Once hot, add the tomato paste, smoked paprika, barbecue sauce and the measured water. Simmer, covered, over a medium heat for 5 min. After 5 min, remove the pan from the heat.
Prep

Meanwhile, slice the ciabatta in half lengthwise. Cut the avocado in half and remove its stone. Scoop the avocado out of its skin using a spoon, then mash it with a fork. Add a squeeze of lemon and salt to taste. Separate the gem lettuce leaves.
Add tofu

5 Add tofu

Once the tofu has baked for 15 min, add it to the barbecue sauce. Return the pan to a medium heat and simmer for 2 min further.
Serve

6 Serve

Spread the mashed avocado onto the bottom slice of the ciabatta, followed by the lettuce and finally the pulled barbecue tofu. Top with the crispy onions. Finally, cover with the top slice and serve the fries alongside.
