Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep vegetables
Rinse the kale leaves and tear them into bite-size pieces. Discard the hard stem. Rinse and slice the celery. Separate the broccoli into florets. Clean and slice the mushrooms. Peel and mince the shallots and garlic.
2 Fry soup base
Heat a large soup pot over a medium-high heat with a drizzle of olive oil. Fry the broccoli, celery, kale and mushrooms with a pinch of salt for 5 min. Add the garlic and shallots and fry for 1 min further.
3 Simmer
Add the measured water, vegetable stock cubes, orzo pasta, dried thyme and dried basil. Bring to a boil and simmer, covered, for 10 min.
4 Finish and serve
Finally stir in the fresh basil leaves. Season the soup with salt and pepper to taste. Divide among soup bowls and serve.
