Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Cook rice

1 Cook rice

  • Rinse the sushi rice in a sieve under cold water until the water runs clear.
  • Add the sushi rice, a pinch of salt and the measured water to a pot with a lid. Bring to a boil over a high heat.
  • Once boiling, reduce the heat to low and cover.
  • Cook for 15 min or until the water is absorbed and the rice is cooked.
  • Once cooked, remove the pot from the heat.
  • Once the rice has cooled, fold in the rice vinegar.
Marinate salmon

2 Marinate salmon

  • Meanwhile, trim and chop the spring onion.
  • In a bowl, combine the salmon, soy sauce, sweet soy sauce, and half the spring onions (reserving the rest for garnish).
Fry

3 Fry

  • Heat a pan over medium heat.
  • Fry the marinated salmon cubes for 3-4 min or until cooked through, flipping occasionally to avoid blackening too much.
  • Sprinkle over the sesame seeds.
Tip! Avoid moving the salmon pieces frequently to prevent them from breaking apart.
Make sauce

  • Meanwhile, in a bowl, mix the cream cheese and sriracha sauce.
Prep

  • Deseed the avocado and chop into cubes.
  • Finely slice the cucumbers.
Serve

6 Serve

  • Serve the Salmon Sushi and Avocado Bowl with Nori Sheets and Sriracha Cream Cheese. Garnish with spring onions.
  • Or, enjoy as hand rolls by adding some rice, salmon, and avocado to a Nori sheets, with a drizzle of sriracha cream cheese.
  • Enjoy with sushi ginger on the side.
