Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Coat prawns
In a large bowl, combine the corn starch, Chinese 5 spice, salt and pepper.
Add the prawns and coat in the mixture.
2 Fry prawns
Heat a large frying pan over a medium-high heat with a generous drizzle of oil.
Once hot, fry the prawns for 3-5min, flipping regularly until golden and cooked through.
3 Prep
Meanwhile, finely slice the redchilli.
4 Fry
Add the springonion and chilli(spicy!) to the prawns.
Fry for 1-2 min until fragrant.
Remove from the pan.
Wipe and retain the pan.
5 Fry rice
Return the pan to a medium-high heat with another drizzle of oil.
Add the rice, carrot, peasgingergarlicpaste and soy sauces.
Stir-fry for 2-3 min.
Push the rice to one side of the pan and crack your eggs into the other side.
Using a wooden spoon or spatula, scamble the eggs for 1-2 min until cooked.
Toss to mix all the ingredients.
6 Serve
Serve the Salt and PepperPrawns with the Vegetable Egg FriedRice and SweetChilliSauce alongside.
