Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Cook sausage
Heat a pan over medium-high heat with a drizzle of oil.
Fry the sausagemeat for 5-6 min, breaking it up with a wooden spoon, until browned and cooked through
Transfer to a plate and set aside.
Retain the pan.
2 Cook veg
Meanwhile, deseed and chop the pepper into bite-sized pieces.
Return the pan to a medium-high heat with a drizzle of oil.
Add the peppers, onions, smoked paprika powder, garlic onion powder, cumin and oregano.
Cook for 2-3 min until softened.
Turn off the heat and keep warm.
3 Scramble eggs
In a small bowl, crack and whisk the eggs with a pinch of salt and pepper to taste.
Heat another pan over a medium heat with a drizzle of oil.
Add the eggs and scramble for 2-3 min or until cooked to your liking.
Turn off the heat and mix in the sausagemeat and cheddar until combined.
4 Assemble
Lay the tortilla flat.
Add half the sausagemix, and half the peppermix.
Roll the burrito by folding in the sides first, then roll tightly from the bottom up, ending with the seam side down.
Heat a large pan over a medium heat with a drizzle of oil.
Carefully toast the burrito, seam side down first, until light golden brown all over.
5 Make crema
Zest and cut the lime into wedges.
In a small bowl, combine the sourcream and zest with a squeeze of limejuice.
6 Serve
Cut the toasted burrito in half (optional).
Plate up the Sausage, Egg and Cheese Breakfast Burritos with Salsa and LimeCrema.
Serve with any remaining limewedges on the side.
