Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil rice

1 Boil rice

  • Rinse the sushi rice in a sieve under cold water until the water runs clear.
  • Add the sushi rice, a pinch of salt and the measured water to a pot with a lid.
  • Bring to a boil over high heat.
  • Once boiling, lower the heat and cover with a lid.
  • Cook for 15 min or until the water is absorbed and the rice is cooked.
  • Once cooked, remove the pot from the heat.
  • Once the rice has cooled slightly, fold in 15 ml rice vinegar.
Prep

  • Meanwhile, peel and grate the carrot.
  • Finely chop the spring onion.
  • Finely slice the radishes.
Make marinade

3 Make marinade

  • In a large bowl, combine the soy sauce, sweet soy sauce, sesame oil, black sesame seeds, spring onion (reserving a handful for garnishing), rice vinegar and a pinch of chilli flakes (spicy!).
  • Set the marinade aside.
Fry tuna

4 Fry tuna

  • Meanwhile, pat the tuna steaks dry with paper towel.
  • Heat a large non-stick pan over medium heat with a drizzle of oil.
  • Fry the tuna steaks for 3-4 min on each side (for a medium or pink center).
  • Transfer the tuna steaks to a plate to rest for 2-3 min.
Tip! Prefer a more well done tuna? Cook it for an extra minute on each side.
Marinate tuna

5 Marinate tuna

  • Thinly slice the tuna steaks.
  • Add to the marinade and allow to sit while the bowl is assembled.
Serve

6 Serve

  • Slice the avocado in half and remove the stone.
  • Cut into this slices and use a spoon to remove the avocado flesh from the skin.
  • Serve the Seared Tuna on a bed of Sushi Rice.
  • Add avocado, edamame beans, carrot and radish slices.
  • Top with the sushi ginger and nori sheets.
  • Drizzle with remaining marinade and any reserved spring onion.
