Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate chicken
Preheat the oven to 220°C/200°C grill.
Soak the bambooskewers in water.
Peel and finely chop the garlic.
Slice the lemon in half.
Chop the chicken into bite-sized pieces.
In a large bowl, combine the garlic, half the yogurt, oliveoil, allspice, turmeric, coriandercuminpowder, smokedpaprika, thyme, a pinch of salt and pepper.
Add the chicken and a generous squeeze of lemon juice, (reserving the rest for the salad).
Mix well and set aside to marinate.
2 Prep
Meanwhile, drain and rinse the chickpeas.
Trim and finely chop the spring onion.
Slice and chop the tomatoes into small pieces.
Slice the cucumbers in quarters, and chop into small pieces.
Pick and finely chop the mint and parsley leaves.
3 Grill chicken
Deseed and roughly chop the red peppers.
Thread the marinated chicken and the peppers onto the bamboo skewers.
Make sure to alternate between them.
Transfer the chickenskewers to a lined baking tray with a drizzle of oil.
Grill the chickenskewers for 12-14 min or until charred and cooked through.
4 Make cauli rice
Using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains.
Tip!Alternatively, use a knife to finely chop the cauliflower.
5 Make salad
In a large bowl, combine the grated cauliflower, chickpeas, springonion, tomatoes, cucumbers, mint and parsley.
Add a drizzle of oliveoil, the rest of the lemon juice, and a good pinch of salt and pepper.
Crumble in the fetacheese.
Mix well to combine.
Tip!Feel free to adjust the amount of cauliflower in the salad to your liking.
6 Serve
Stir the remaining yogurt with a pinch of salt and pepper.
Divide the chickenskewers evenly among plates and drizzle some yogurt on top.
Serve with the chickpea cauli salad alongside.
