Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Slice the halloumi into bite-sized strips.
  • Slice the lemon into wedges.
  • Add a drizzle of olive oil into a large bowl with a pinch of allspice and chilli powder (spicy!).
  • Add the cinnamon powder, garlic onion powder, coriander cumin powder, smoked paprika and a squeeze of lemon juice.
  • Mix until combined and add the halloumi.
  • Set aside.
Tip! Sensitive to spice? Go easy on the chilli powder.
Fry onion

2 Fry onion

  • Peel and finely slice the onion.
  • Heat a large non-stick pan over a medium-high heat with a drizzle of oil.
  • Once hot, add the onions with a pinch of salt and fry for 5 min stirring frequently.
  • Add the sumac powder and fry for 1 min further.
  • Transfer the onions to a plate and reserve the pan.
Make cauli rice

3 Make cauli rice

  • Meanwhile, using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains.
  • Heat a second pan over a medium heat with a drizzle of oil.
  • Once hot, add the cauliflower with a pinch of salt and stir-fry for 5 min.
Fry halloumi

4 Fry halloumi

  • Meanwhile, return the reserved pan over a medium heat with a drizzle of oil.
  • Once hot, add the halloumi and fry for 3-5 min or until golden.
Prep

5 Prep

  • Meanwhile, halve the cherry tomatoes.
  • Slice the cucumbers into half moons.
  • Peel and mince the garlic.
  • In a small bowl, mix together the garlic, a squeeze of lemon and yogurt with a pinch of salt.
Serve

6 Serve

  • Serve the Shawarma Spiced Halloumi with Cauliflower Rice and Garlic Yogurt Sauce.
  • Serve with the garlic yogurt on the side.
