Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Slice the halloumi into bite-sized strips.
Slice the lemon into wedges.
Add a drizzle of olive oil into a large bowl with a pinch of allspice and chillipowder(spicy!).
Add the cinnamonpowder, garliconionpowder, coriandercuminpowder, smokedpaprika and a squeeze of lemon juice.
Mix until combined and add the halloumi.
Set aside.
Tip!If cooking for kids, set aside a portion of the plain halloumi.
2 Make couscous
Boil the measuredwater and dissolve the 0.5 vegetablestockcube to make the stock.
Add the couscous to a large bowl with the stock.
Cover with a plate for 10 min.
After 10 min, fluff up with a fork.
Set aside.
3 Fry onion
Meanwhile, peel and finely slice the onion.
Heat a large non-stick pan over a medium-high heat with a drizzle of oil.
Once hot, add the onions with a pinch of salt.
Fry for 5 min, stirring frequently.
Add the sumacpowder.
Fry for 1 min further.
Transfer the onions to a plate.
Reserve the pan.
Tip!If cooking for kids, reserve a portion of the onions without the sumac.
4 Fry
Return the pan over a medium heat with another drizzle of oil.
Once hot, add the halloumi.
Fry for 3-5 min or until golden.
Tip!If cooking for kids, fry a portion of the plain halloumi first and set aside.
5 Prep
Meanwhile, halve the cherrytomatoes.
Slice the cucumbers into half moons.
Peel and mince the garlic.
In a small bowl, mix together the garlic, a squeeze of lemon and yogurt with a pinch of salt.
Tip!If cooking for kids, reserve a portion of the yogurt keeping it plain.
6 Serve
Serve the Shawarma Spiced Halloumi with Couscous and GarlicYogurtDip alongside the cherrytomatoes and cucumbers.
Serve with garlicyogurt and lemon wedges on the side.
Tip!If cooking for kids, divide the plain halloumi, couscous, cucumber, tomatoes and onion. Serve the plain yogurt alongside.
