Preheat the oven to 200°C/180°C fan. Remove the butter and steak from the fridge. Slice the sweet potatoes (skins on) into fries. Add the fries to a large baking tray with a drizzle of vegetable oil. Toss. Sprinkle with a generous pinch of salt and the corn starch. Roast in the oven for 30 min or until golden and crisp.
Meanwhile, add the smoked paprika to a plate with a generous pinch of salt. Pat the steaks dry with kitchen paper. Turn the steaks in smoked paprika and set aside.
Cut the avocado in half and remove its stone. Scoop the avocado out of its skin using a spoon, then chop it. Peel and grate the garlic. Halve the limes.
Place the avocado, soft butter, garlic, salt and pepper in a food processor. Squeeze the lime juice directly into the food processor. Blitz until smooth.
Heat a pan with a drizzle of oil over a high heat. Once very hot, add the steaks and fry them for 1-3 min on each side or until cooked to your liking. Transfer the steaks to a plate and leave them to rest for 5 min.
Serve the rested steak with the avocado cream and sweet potato fries on the side.
Serve with regular potato fries!
