Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil pasta
Bring a large pot of salted water to the boil.
Once boiling, add the pasta and cook for 8-10 min until 'al dente' or cooked to your liking.
Drain the pasta well and reserve 1 cup of pastawater.
2 Make coleslaw
Peel and grate the carrot.
Finely shred the cabbage.
In a bowl, combine the carrot and cabbage with the mayonnaise, Dijon mustard, vinegar and a pinch of salt.
Mix to combine and place in the fridge to chill.
3 Make chipotle beans
Drain and rinse the pintobeans.
In a small sauce pot, combine the beans with the brownsugar, smokedpaprikapowder, a pinch of chipotlepowder(spicy!), a pinch of salt, and the measuredwater.
Bring to a boil, then lower the heat and gently simmer until thickened.
Cover and keep warm.
4 Make mac'n'cheese
Meanwhile, heat a large non-stick saucepan over medium heat.
Add the butter, flour, and crumble in the stockcube.
Cook, stirring continuously until a sandy paste has formed.
Gradually whisk in the milk and a splash of reserved pastawater.
Cook for 1-2 min further or until the sauce has thickened.
Remove the pan from the heat and add the gratedcheddar. Stir until smooth.
Add the cookedpasta and stir through.
5 Cook steak
In a bowl, mix together barbecuesauce, applecidervinegar and cayennepowder(spicy!), and keep aside.
Pat the steaks dry with kitchen paper.
Rub with oil and season with salt.
Heat a large pan over high heat. Once very hot, fry the steaks for 2-4 min on each side until cooked as preferred.
In the last 1 min of cooking, brush the steaks with the barbecueglaze.
Transfer the steaks to a plate and leave to rest. Cover with foil to keep warm.
6 Serve
Mix the remaining barbecue glaze with the beans.
Slice the SirloinSteak and serve with the Mac'n'Cheese topped with crispyonions, Coleslaw, BBQChipotleBeans, and Gherkins alongside.
