Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Bake fries
Preheat the oven to 200°C/180°C fan.
Slice the potatoes (skins on) into fries.
Add the fries to a large lined baking tray.
Add a drizzle of vegetableoil and a generous pinch of salt.
Toss the fries in the oil until they are fully coated.
Bake for 30 min or until golden and crisp.
2 Prep
Meanwhile, peel and mince the garlic.
Peel and finely chop the onion.
Pick and roughly chop the parsley leaves.
Grate the Parmesan.
3 Fry steak
Pat the steaks dry with kitchen paper.
Rub them with vegetableoil and season with salt and pepper.
Heat a large pan over a high heat.
Once very hot, add the steaks.
Fry them for 2-4 min on each side or until cooked to your liking.
Transfer the steaks to a plate.
Leave them to rest.
Reserve the pan.
4 Make sauce
Return the pan to a medium heat.
Once hot, add the onion with a pinch of salt.
Fry for 3-5 min or until softened.
Add the garlic, Worcestershire, onion marmalade, measured water and black pepper.
Simmer for 3 min until the sauce begins to thicken.
Remove from the heat.
Stir in the butter.
Tip!Adjust the sweetness of gravy to your liking by using more or less of the onion marmalade.
5 Add Parmesan
After the fries have baked for 30 mins add the truffle oil (to taste!), and parmesan.
Roast for 5 min further or until the parmesan begins to melt and crisp up.
Remove from the oven and top with a handful of parsley.
Mix through.
6 Serve
