Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast potatoes
Preheat the oven to 200°C/180°C fan.
Line a baking tray with parchment paper.
Slice the potatoes (skin on) into wedges.
Drizzle over some vegetable oil and potatoseasoning, and toss to coat.
Bake in the oven for 30-35 min until cooked through.
2 Prep toppings
Meanwhile, finely shred the lettuce.
Slice the tomatoes into half moons.
Peel and finely chop the shallots.
Peel and finely chop the garlic.
Pick and roughly chop some mint.
Slice the lemon into quarters.
3 Make Tzatziki
Using a box grater, grate the cucumber into a small bowl, squeezing out the excess liquid.
Add the yogurt, chopped mint, garlic (to taste), a squeeze of lemon, and a pinch of salt and pepper.
4 Form tortillas
In a bowl, combine the lambmince, driedthyme, driedoregano, garlic onion powder, cinnamonpowder, and a good pinch of salt and pepper.
Using clean hands, form into 4 meatballs.
Place a meatball in the center of the tortilla.
Using the back of a spoon (or clean fingers), press the lamb into the tortilla and spread it right towards the edges.
Repeat until you have all the tortillas prepared.
5 Fry tacos
Heat a large non-stick fry pan to medium heat with a small drizzle of oil.
Fry the tortilla, meat-side facing down for 2-3 min until crispy and cooked through.
Using a spatula, slide under the lamb, and flip the tortilla over.
Cook for a few seconds until warmed through, then transfer to a board or plate.
Repeat the steps until all tortillas are done.
Tip!Use your largest pan to get through these faster!
6 Serve
Before serving, toss the lettuce with the redvinegar and a pinch of salt and pepper.
