Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Mix dressing
In a small bowl, combine the sesameoil, ricevinegar, soysauce, whitesugar and chilligarlicsauce(spicy!).
Mix well until combined.
2 Smash cucumbers
Place the cucumbers on a large chopping board and trim the ends.
Use the back of a wooden spoon and firmly smash the cucumbers 2-3 times until they split.
Use a sharp knife to cut them into bite sized pieces.
3 Mix salad
In a large bowl, combine the cucumber pieces, springonion and edamamebeans.
4 Add dressing
Add the dressing and toss to combine.
5 Toast sesame seeds
In a small pan over medium heat, dry fry the sesameseeds for 1-2 min until toasted (optional).
6 Serve
Garnish with the Sesame Seeds and serve the SmashedCucumber and Edamame Salad with ChilliGarlic Dressing, alongside your favourite dinner.
