Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry chicken
Heat a large non-stick pan over a medium-high heat with a drizzle of oil.
Once hot, add the chicken breasts with a pinch of salt.
Cook for 5-7 min on either side until golden and cooked through.
Once cooked, transfer the chicken to a plate.
Reserve the pan.
Tip!If the chicken is browning too quickly without cooking all the way through, add a splash of water to the pan, reduce the heat and cover with a lid until fully cooked.
2 Prep slaw
Meanwhile, slice the cabbage as thinly as possible.
Transfer the cabbage to a bowl.
Peel and grate the carrots.
Trim and finely chop the spring onion.
Add the carrot and spring onion to the cabbage.
3 Toss slaw
Add the mayonnaise, whitebalsamic, honey, salt, and pepper to the slaw.
Mix well.
Set the Rainbow Coleslaw aside.
4 Make sauce
Return the reserved pan to a medium heat with a drizzle of oil.
Once hot, add the tomatopaste, garliconionpowder, barbecuesauce, smokedpaprika, Worcestershiresauce and the measured water.
Simmer the sauce for 2 min or until thickened.
5 Glaze chicken
Add the chicken to the barbecuesauce.
Simmer for 1 min further and toss to coat evenly.
Remove the pan from the heat.
6 Serve
Meanwhile, pick and finely chop the parsley leaves.
Serve the Smoky BarbecueChicken with Rainbow Coleslaw alongside.
Garnish the chicken with the parsley.
