Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Fry chicken

1 Fry chicken

  • Heat a large non-stick pan over a medium-high heat with a drizzle of oil.
  • Once hot, add the chicken breasts with a pinch of salt.
  • Cook for 5-7 min on either side until golden and cooked through.
  • Once cooked, transfer the chicken to a plate.
  • Reserve the pan.
Tip! If the chicken is browning too quickly without cooking all the way through, add a splash of water to the pan, reduce the heat and cover with a lid until fully cooked.
Prep slaw

2 Prep slaw

  • Meanwhile, slice the cabbage as thinly as possible.
  • Transfer the cabbage to a bowl.
  • Peel and grate the carrots.
  • Trim and finely chop the spring onion.
  • Add the carrot and spring onion to the cabbage.
Toss slaw

3 Toss slaw

  • Add the mayonnaise, white balsamic, honey, salt, and pepper to the slaw.
  • Mix well.
  • Set the Rainbow Coleslaw aside.
Make sauce

4 Make sauce

  • Return the reserved pan to a medium heat with a drizzle of oil.
  • Once hot, add the tomato paste, garlic onion powder, barbecue sauce, smoked paprika, Worcestershire sauce and the measured water.
  • Simmer the sauce for 2 min or until thickened.
Glaze chicken

5 Glaze chicken

  • Add the chicken to the barbecue sauce.
  • Simmer for 1 min further and toss to coat evenly.
  • Remove the pan from the heat.
Serve

6 Serve

  • Meanwhile, pick and finely chop the parsley leaves.
  • Serve the Smoky Barbecue Chicken with Rainbow Coleslaw alongside.
  • Garnish the chicken with the parsley.
