Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat oven to 220°C/200°C fan.
Bring a pot of salted water to the boil.
Separate the broccoli into florets.
Peel and chop potatoes into bite-sized pieces.
Finely chop sundriedtomatoes.
Grate the lemonzest, taking care to avoid its bitter white pith and cut into quarters.
Tip!If using an air fryer, preheat to 190°C. Line the air fryer basket for easier clean up.
2 Make mash
Add the chopped potatoes to the pot.
Cook for 20 min or until soft. Drain.
Return potatoes to the pot.
Add the butter, milk, gratedParmesan, salt and pepper, to taste.
Use a potato masher to mash until smooth.
Add the sundriedtomatoes. Mix until well incorporated.
Tip!If cooking for kids, set aside a portion of plain mash.
3 Marinate chicken
In a large bowl, combine smokedpaprika, cumin, garlic, driedthyme with a squeeze of lemonjuice, a pinch of salt and pepper and a drizzle of oil.
Toss the chicken to coat evenly.
Tip!If cooking for kids, reserve a portion of plain chicken.
4 Roast chicken
Roast the chicken for 20-25 min or until crispy on the outside and cooked through.
Tip!If using an air fryer, cook the chicken for 15-20 min, turning half way through. To check if the chicken is cooked, insert a knife into the meat - if the juices run clear, it's ready.
5 Boil veg
Meanwhile, in a small pot of salted water, boil broccoli and peas for 3 min.
Drain and coat in lemonpepperseasoning and lemonzest.
Tip!If cooking for kids, reserve a portion of plain broccoli and peas.
6 Serve
Serve the SmokyChicken on a bed of Sundried Tomato Mash and a portion of Zesty Green Veg.
