Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Cook bulgur wheat
Bring a pot of salted water to the boil. Once boiling, add the bulgur wheat and cook for 7-9 min or until tender with a slight bite. Once cooked, drain, return to the pot and set aside.
2 Prep
Meanwhile, peel and finely chop the onion. Peel and mince the garlic.
3 Fry
Heat a large pan over a medium-high heat with a drizzle of oil. Once hot, add the onion with a pinch of salt and fry for 5 min. Add the garlic, smokedpaprikapowder, driedoregano, a pinch of chilliflakes(spicy!) and tomatopaste. Fry for 1 min further. Add tomatopassata, measuredwater and honey. Reduce the heat to medium and simmer for 8-10 min until starting to thicken.
Tip!Sensitive to spice? Go easy on the chilli flakes.
4 Toss salad
Meanwhile, slice the lemon into wedges. Deseed and finely chop the redpepper. Finely chop the cucumber into cubes. Finely chop the sun dried tomatoes. Pick and finely chop the mint leaves. Once cooled slightly, add the bulgurwheat to a large bowl with the redpepper, cucumber, sundriedtomatoes and mint. Add a squeeze of lemon juice to taste (reserve the rest for garnish), a drizzle of oliveoil and season with salt and pepper to taste.
5 Add prawns
Add the prawns to the tomatosauce and simmer for 3-4 min further on a medium heat or until the prawns are cooked through. Remove from the heat and season with salt and pepper to taste.
6 Serve
Divide the bulgurwheatsalad among bowls and top with the smoky Spanishprawns. Garnish with the remaining lemonwedges.
