Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make mash
Peel and chop the potatoes into bite-sized pieces.
Add the potatoes to a pot of salted water and bring to the boil.
Cook for 15-20 min until soft.
Drain the potatoes and return to the pot.
Mash until smooth, gradually adding the milk until it reaches the desired consistency.
Season with salt and pepper.
2 Fry chicken
Meanwhile, coat the chicken breasts with a small drizzle of oil and season with the chicken seasoning and pinch of pepper.
Heat a large non-stick pan over medium-high heat with a drizzle of oil.
Fry the chicken breasts for 5-7 min each side until cooked through.
Remove from the pan, set aside, and reserve the pan unwiped.
3 Cook broccoli
Bring a pot of salted water to a boil.
Cook the broccoli for 2-4 min, until tender.
Drain.
4 Make sauce
Meanwhile, peel and finely slice the onion.
Return the frying pan to a medium heat with a small drizzle of oil.
Fry the onions for 5-6 min until golden and caramelised.
Add the measured water, and mix to de-glaze the pan.
Add the sour cream, garlic onion powder and vegetable seasoning.
Mix well and cook for 1-2 min.
5 Finish mash
Meanwhile, finely chop the chives.
Mix through the mash.
6 Serve
Serve the Sour Cream and OnionChicken with Chive Mash and Broccoli.
