Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep vegetables
Peel and chop the onion and garlic. Dice the green bell pepper and slice the mushrooms, celery and okra.
2 Toast flour
Heat a wide saucepan over a medium heat. Add a drizzle of oil and sprinkle with flour. Stir or whisk fro 4-5 min until the roux reaches a dark caramel color, a bit darker than peanut butter. Don’t let it burn!
3 Add vegetables
Add the onion and fry for 2 min further. Add the green pepper, celery, garlic and okra. Fry, stirring frequently, for 5 min until the vegetables have softened.
4 Simmer
Add the chopped tomatoes, measured water, vegetable stock cube, mushrooms, rinsed and drained red kidney beans and whitebeans, smokedpaprika, chilli powder, thyme and the dried bay leaves. Bring to a boil, lower the heat to medium-low and simmer for 20 min.
5 Serve
Divide the gumbo among plates and serve with the sliced greenchillis.
