Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep vegetables

1 Prep vegetables

Peel and chop the onion and garlic. Dice the green bell pepper and slice the mushrooms, celery and okra.
Toast flour

2 Toast flour

Heat a wide saucepan over a medium heat. Add a drizzle of oil and sprinkle with flour. Stir or whisk fro 4-5 min until the roux reaches a dark caramel color, a bit darker than peanut butter. Don’t let it burn!
Add vegetables

3 Add vegetables

Add the onion and fry for 2 min further. Add the green pepper, celery, garlic and okra. Fry, stirring frequently, for 5 min until the vegetables have softened.
Simmer

4 Simmer

Add the chopped tomatoes, measured water, vegetable stock cube, mushrooms, rinsed and drained red kidney beans and white beans, smoked paprika, chilli powder, thyme and the dried bay leaves. Bring to a boil, lower the heat to medium-low and simmer for 20 min.
Serve

5 Serve

Divide the gumbo among plates and serve with the sliced green chillis.
