Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Chop potatoes (skins on) into bite-sized cubes or half moons.
Deseed the redpepper and chop into cubes.
Peel and slice the redonion into small chunks.
2 Saute veg
Heat a large frying pan to medium heat with a drizzle of oil.
Add the potatoes.
Fry for 10 min until lightly browned.
Add the onions, redpepper, coriandercuminpowder, thyme, with a pinch of salt and pepper.
Fry for 5-7 min until tender.
Cover to steam cook while you prepare the sausage.
3 Fry sausage
Meanwhile, add the sausage to another pan and bring it to a medium-high heat.
Fry the sausage in its fat for 4-6 min until browned and cooked through.
Transfer most of the rendered fat to a small bowl.
Remove and slice the sausage into smaller pieces, then add it back to the pan with the fajitaseasoning.
Give it a good mix.
Transfer it to a plate.
Reserve the pan for step 5.
Tip!This extra step will help you save the extra calories by removing most of the oil from the pan as the sausage cooks!
4 Combine
Add the sausages to the cooked vegetables.
Give everything a good mix.
Tear in the freshcoriander.
Keep warm.
5 Fry Eggs
Meanwhile, reheat the reserved pan on medium high.
Add some of the reserved fat.
Fry the eggs with a pinch of salt and pepper.
6 Serve
Slice the lime in wedges.
Serve the Southwest Sausage and Potato Hash Skillet with Fried Eggs, Salsa, and Sour Cream on top.
Squeeze a bit of lime over.
