Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil orzo

1 Boil orzo

  • Preheat the oven to 220°C/200°C fan.
  • Soak the bamboo skewers in water.
  • Bring a large pot of salted water to the boil.
  • Add the orzo.
  • Cook for 8-10 min until 'al dente' or cooked to your liking.
  • Drain well and allow to cool.
Prep

2 Prep

  • De-seed and chop the red pepper into bite-sized chunks.
  • Peel and chop the onion into bite-sized chunks.
  • Peel and mince the garlic.
  • Zest and cut the lemon into wedges, keeping the zest for the salad.
  • In a bowl, combine the garlic, lemon pepper seasoning, dried oregano, a squeeze of lemon juice and splash of oil.
Tip! Cut the red pepper and onion chunks the same width as the beef to ensure even cooking!
Thread skewers

3 Thread skewers

  • To a large bowl, add the tenderloin cubes, paprika, cumin powder, salt and pepper.
  • Pour over half of the lemon mixture and set aside the remaining - this is your dressing for the salad.
  • Mix well to coat the beef cubes.
  • Divide and thread the onions, peppers and beef cubes amongst the skewers.
Cook skewers

4 Cook skewers

  • Place the skewers on a lined baking tray.
  • Cook in oven for 8-10 mins until charred and cooked to your liking.
Tip! Alternatively, fire up the grill or air fryer to cook the skewers!
Make tzatziki

5 Make tzatziki

  • Meanwhile, into a bowl, grate the cucumber.
  • Add the yogurt and mix well to combine.
  • Adjust seasoning to taste.
  • Set aside until serving.
Make salad

6 Make salad

  • Chop the kalamata olives.
  • Cut the cherry tomatoes in half.
  • Pick and finely chop the parsley and dill.
  • In a large bowl, combine the lemon zest, olives, tomatoes, parsley, dill and cooled down orzo.
  • Pour over the remaining dressing.
  • Season to taste with salt, pepper and lemon juice.
  • Serve up the Souvlaki-Style Beef Tenderloin Skewers with Herby Orzo Salad and Tzatziki.
