Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil orzo
Preheat the oven to 220°C/200°C fan.
Soak the bamboo skewers in water.
Bring a large pot of salted water to the boil.
Add the orzo.
Cook for 8-10 min until 'al dente' or cooked to your liking.
Drain well and allow to cool.
2 Prep
De-seed and chop the redpepper into bite-sized chunks.
Peel and chop the onion into bite-sized chunks.
Peel and mince the garlic.
Zest and cut the lemon into wedges, keeping the zest for the salad.
In a bowl, combine the garlic, lemonpepperseasoning, driedoregano, a squeeze of lemonjuice and splash of oil.
Tip!Cut the red pepper and onion chunks the same width as the beef to ensure even cooking!
3 Thread skewers
To a large bowl, add the tenderloincubes, paprika, cumin powder, salt and pepper.
Pour over half of the lemonmixture and set aside the remaining - this is your dressing for the salad.
Mix well to coat the beef cubes.
Divide and thread the onions, peppers and beefcubes amongst the skewers.
4 Cook skewers
Place the skewers on a lined baking tray.
Cook in oven for 8-10 mins until charred and cooked to your liking.
Tip!Alternatively, fire up the grill or air fryer to cook the skewers!
5 Make tzatziki
Meanwhile, into a bowl, grate the cucumber.
Add the yogurt and mix well to combine.
Adjust seasoning to taste.
Set aside until serving.
6 Make salad
Chop the kalamataolives.
Cut the cherrytomatoes in half.
Pick and finely chop the parsley and dill.
In a large bowl, combine the lemonzest, olives, tomatoes, parsley, dill and cooled down orzo.
Pour over the remaining dressing.
Season to taste with salt, pepper and lemonjuice.
