Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil rice
Rinse the rice.
Add the rice, a pinch of salt and the measuredwater to a pot with a lid and bring to a boil over a high heat.
Once boiling, reduce the heat to low, cover, and cook for 12-14 min or until the water is absorbed and the rice is tender.
Once cooked, remove the pot from the heat and keep covered until serving.
2 Prep
Deseed and chop the pepper into small bite-sized pieces.
Grate or chop the zucchini into small bite-sized pieces.
Pick and finely chop the parsley.
3 Make sauce
Heat a large non-stick frying pan over medium-high heat with a drizzle of oil.
Once hot, fry the pepper and zucchini for 2-3 min until slightly softened.
Add the tomatopaste, smokedpaprika, paprika and garliconionpowder.
Mix well. Add the plumtomatoes, breaking them up with a spoon or spatula.
Add the measuredwater, sugar and 0.5 stockcube.
Mix well and bring to a boil. Lower the heat.
Simmer for 3-4 min until slightly reduced.
4 Cook fish
Meanwhile, drain, pat dry and portion the cod into smaller portions.
Nestle the cod in the tomatosauce.
Sprinkle the lemonpepperseasoning over the cod, cover and cook for 5-7 min until the cod is fully cooked.
5 Finish rice
Meanwhile, add the peas to the cooked rice.
Mix well and cover to keep warm until serving.
6 Serve
Serve the SpanishPaprika and TomatoCod over the GreenPeaRice.
Garnish with chopped parsley.
