Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil rice

1 Boil rice

  • Rinse the rice.
  • Add the rice, a pinch of salt and the measured water to a pot with a lid and bring to a boil over a high heat.
  • Once boiling, reduce the heat to low, cover, and cook for 12-14 min or until the water is absorbed and the rice is tender.
  • Once cooked, remove the pot from the heat and keep covered until serving.
Prep

2 Prep

  • Deseed and chop the pepper into small bite-sized pieces.
  • Grate or chop the zucchini into small bite-sized pieces.
  • Pick and finely chop the parsley.
Make sauce

3 Make sauce

  • Heat a large non-stick frying pan over medium-high heat with a drizzle of oil.
  • Once hot, fry the pepper and zucchini for 2-3 min until slightly softened.
  • Add the tomato paste, smoked paprika, paprika and garlic onion powder.
  • Mix well. Add the plum tomatoes, breaking them up with a spoon or spatula.
  • Add the measured water, sugar and 0.5 stock cube.
  • Mix well and bring to a boil. Lower the heat.
  • Simmer for 3-4 min until slightly reduced.
Cook fish

4 Cook fish

  • Meanwhile, drain, pat dry and portion the cod into smaller portions.
  • Nestle the cod in the tomato sauce.
  • Sprinkle the lemon pepper seasoning over the cod, cover and cook for 5-7 min until the cod is fully cooked.
Finish rice

5 Finish rice

  • Meanwhile, add the peas to the cooked rice.
  • Mix well and cover to keep warm until serving.
Serve

6 Serve

  • Serve the Spanish Paprika and Tomato Cod over the Green Pea Rice.
  • Garnish with chopped parsley.
