Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast potatoes
Preheat the oven to 220°C/200°C fan.
In a small bowl, mix together the cumin, paprika, driedmint, a pinch of cayenne(spicy!).
Cut the potatoes (skin on) into small bite-sized pieces and place onto a lined baking tray.
Add a drizzle of oil, a generous pinch of salt and 1/3 of the spice mix.
Toss to coat.
Roast for 15 min, then leave aside until step 4.
2 Prep
Peel and finely chop the redonion.
Peel and finely chop the garlic.
Pick and finely chop the parsley.
3 Make kofta
In a large bowl, combine the beefmince, redonion, half of the garlic (save remaining for step 5), parsley, panko, remaining spice mix and salt.
With clean hands, knead until fully combined.
Shape into 10 equal-sized pieces and set aside.
4 Roast kofta
After 15 min, take out the potatoes and add the kofta.
Bake for another 12-15 min until potatoes and kofta are browned well and cooked through.
Tip!If the kofta are cooked, remove and continue cooking the potatoes until crispy.
5 Sauce & Salad
Meanwhile, cut the lemon into wedges.
Cut the cucumber into half moons.
Cut the tomatoes into wedges.
Finely chop the springonion.
In a bowl, combine the tahini, remaining garlic, measured water and squeeze of lemonjuice until smooth.
Mix in the yogurt till combined.
In another bowl, combine the cucumber, tomatoes, springonion, sumac, salt, pepper, a drizzle of olive oil and another squeeze of lemonjuice.
6 Serve
Spoon some tahiniyogurt onto the plate.
Scatter around the potatoes and kofta.
Serve the Spiced Beef Kofta with Roasted Potatoes, TahiniYogurt and Salad on the side.
