Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Roast potatoes

1 Roast potatoes

  • Preheat the oven to 220°C/200°C fan.
  • In a small bowl, mix together the cumin, paprika, dried mint, a pinch of cayenne (spicy!).
  • Cut the potatoes (skin on) into small bite-sized pieces and place onto a lined baking tray.
  • Add a drizzle of oil, a generous pinch of salt and 1/3 of the spice mix.
  • Toss to coat.
  • Roast for 15 min, then leave aside until step 4.
Prep

  • Peel and finely chop the red onion.
  • Peel and finely chop the garlic.
  • Pick and finely chop the parsley.
Make kofta

3 Make kofta

  • In a large bowl, combine the beef mince, red onion, half of the garlic (save remaining for step 5), parsley, panko, remaining spice mix and salt.
  • With clean hands, knead until fully combined.
  • Shape into 10 equal-sized pieces and set aside.
Roast kofta

4 Roast kofta

  • After 15 min, take out the potatoes and add the kofta.
  • Bake for another 12-15 min until potatoes and kofta are browned well and cooked through.
Tip! If the kofta are cooked, remove and continue cooking the potatoes until crispy.
Sauce & Salad

5 Sauce & Salad

  • Meanwhile, cut the lemon into wedges.
  • Cut the cucumber into half moons.
  • Cut the tomatoes into wedges.
  • Finely chop the spring onion.
  • In a bowl, combine the tahini, remaining garlic, measured water and squeeze of lemon juice until smooth.
  • Mix in the yogurt till combined.
  • In another bowl, combine the cucumber, tomatoes, spring onion, sumac, salt, pepper, a drizzle of olive oil and another squeeze of lemon juice.
Serve

6 Serve

  • Spoon some tahini yogurt onto the plate.
  • Scatter around the potatoes and kofta.
  • Serve the Spiced Beef Kofta with Roasted Potatoes, Tahini Yogurt and Salad on the side.
