Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Peel the onions.
Finely slice half and finely chop the remaining half.
In a small bowl, combine the onionslices, redvinegar and pinch of salt and sugar.
Leave to marinate until serving.
Peel and finely chop the garlic.
Finely chop the tomatoes.
Finely chop chipotlechilli.
Drain the sweetcorn.
Pick the corianderleaves, retain the stalks and finely chop them.
Zest and chop the limes into wedges.
2 Make corn salsa
Heat a large frying pan over a medium-high heat.
Add the corn.
Fry for 2-3 min until slightly charred.
Transfer the corn to a bowl and reserve pan for step 3.
To the same bowl as the corn, add the tomatoes, finely chopped onions, corianderleaves.
Add a pinch of salt and squeeze of limejuice to taste.
3 Fry lamb
Return the reserved pan to a medium-high heat with a small drizzle of oil.
Fry the lamb for 3-4 min until browned.
Add the garlic, coriandercuminpowder, smokedpaprika, driedoregano, corianderstalks and a pinch of salt and black pepper.
Fry for 1 min further.
4 Simmer
Add the chipotle(spicy!), tomatopaste, remaining sugar and measuredwater.
Mix well.
Simmer for 3-4 min until the liquid has reduced.
Adjust seasoning to taste.
5 Make jalapeño crema
Meanwhile, finely chop the jalapenos.
In a small bowl, combine the sourcream and mayonnaise with the jalapenos and limezest.
Set the jalapenocrema aside.
6 Serve
Heat the tortillas in the microwave for 30 secs.
Spoon some of the Spicy ChipotleLamb into a tortilla.
Add some of the sweetcornsalsa and a dollop of JalapenoCrema.
Finish with the pickledonions.
Serve the Spicy ChipotleLamb Tacos with Sweetcorn Salsa and Jalapeno Crema.
