Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep sauce
Preheat oven to 200°C/180°C fan.
Bring a kettle of water to a boil.
In a small bowl, combine the hoisinsauce, Chinese5spice, Chinesechillisauce(spicy!), sweetsoysauce, ricevinegar, a drizzle of oil, and the measured water - this is your sauce.
2 Roast
Place the duck in a roasting pan.
Spread 1/2 the amount of the sauce on all sides of the duck, reserving the rest for the noodles.
Pour the boiled measured water into the corner of the tray.
Cover with foil, and roast for 20 min until warmed through.
Then uncover, and roast for another 20 min until it's sticky and glossy, using the pan's juices to baste.
Set the oven grill on high, and roast the duck for 3-5 min until lightly charred around the edges.
3 Prep
Meanwhile, deseed and chop the pepper into strips.
Trim the broccoli ends.
Slice the springonions.
Pick and roughly chop the coriander
4 Stir-fry Broccoli
Heat a large pan over medium heat with sesameoil.
Fry the garlicpaste and sesameseeds for 1 min until fragrant.
Add the broccoli and cook for 1 min until coated.
Add the measured water, cover and steam cook for 2 min.
Once tender, remove to a plate, and reserve the pan.
5 Make noodles
Place the noodles in a colander and rinse with hot water to lightly loosen, then drain.
Return the reserved pan to a medium high heat with a drizzle of oil.
Fry the peppers for 2-3 min until charred.
Add the drained noodles and remaining sauce.
Fry for 2-3 min, tossing to coat in the sauce.
Turn off the heat and stir through the springonions and coriander.
Tip!Like it extra saucy, add a splash of water with the noodles.
6 Serve
Separate and slice the RoastedHoisinHalfDuck into portions.
Serve with the Udon Noodles and GarlicSesameBroccoli to the side.
Tip!If needed, use any of the roasting pan juices as an additional sauce for the duck.
