Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Peel and finely chop the garlic.
  • Slice the cherry tomatoes in half.
  • Chop the beef chorizo into small bite-sized pieces, or into slices.
Cook sauce

2 Cook sauce

  • Heat a large pan over medium heat.
  • Add the chorizo and fry for 1-2 min until crispy.
  • Add the cherry tomatoes, passata, measured water, and tear in the basil leaves.
  • Season with a pinch of salt, black pepper, and sugar (to taste).
  • Bring to a simmer, cover, and cook the sauce for 2-3 min.
Add pasta

3 Add pasta

  • Carefully add the ravioli into the sauce and stir to coat.
  • Lower the heat, cover and cook for 5-6 min until the pasta has softened, and the sauce has thickened.
Tip! Don't force apart stuck pasta — just add it to the sauce, and the heat will gently loosen it as it simmers.

  • Meanwhile, heat a second pan over medium heat with a small drizzle of oil.
  • Fry the garlic for 1 min, then add the prawns and paprika powder.
  • Fry the prawns for 3-4 min until cooked through.
Make salad

5 Make salad

  • Combine the white balsamic vinegar, wholegrain mustard, a pinch of sugar, and a small drizzle of olive oil - this is your dressing.
  • Peel and slice the shallots.
  • In a bowl, add the spinach and shallots and drizzle over the dressing when ready to serve.
Serve

6 Serve

  • Divide the Tomato Mozzarella Ravioli with Spicy Prawns and Chorizo amongst plates.
  • Tear in the fresh mozzarella, and garnish with the remaining basil.
  • Serve the Baby Spinach Salad on the side.
