Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Cook potatoes
Preheat oven to 220°C/200°C fan.
Cut the potatoes (skin on) into small bite-sized pieces.
Toss onto a lined baking tray with a drizzle of oil, garlic onion powder, a pinch of salt and pepper.
Mix to coat the potatoes.
Roast for 30-35 min.
2 Add sausages
Meanwhile, cut the sausages(spicy!) into thirds.
Deseed the green pepper and cut into big chunks.
With 10-12 min cooking time left, add the sausage and green pepper to the tray with the potatoes.
Roast until the potatoes and sausage are cooked through.
3 Make dressing
Cut the lemon into wedges.
In a small bowl, combine the pomegranate molasses, 2 Tbspolive oil, 1 Tbsplemonjuice, sumac, a pinch of salt and pepper.
4 Make salad
Cut the cucumber into bite-sized quarters.
Cut the tomato into small bite-sized pieces.
Pick and roughly chop the parsley.
In a bowl, combine the cucumber, tomato and parsley.
Season with a pinch of salt and pepper and mix.
5 Serve
Serve the Spicy MerguezLambSausage with RoastedGreen Pepper and Potatoes alongside the FreshSalad.
Drizzle the pomegranatedressing over the sausage.
Garnish with the pomegranate kernels.
Serve the yogurt to the side.
