Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep veg
Using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains and set aside.
Slice the babycorn in half, lengthways.
Trim the snowpeas.
Trim and roughly chop the spring onions, reserving the greens for garnish.
Pick the coriander leaves.
2 Make sauce
In a small bowl, combine 1 tsp of cornstarch, the soysauce, white vinegar, brownsugar, hoisinsauce, sweetsoysauce, gingergarlicpaste, and sesameoil.
Mix well.
Keep the sauce aside until Step 5.
3 Fry cauli rice
Place a large pan over a medium-high heat with a drizzle of oil.
Once hot, add the cauliflower with a pinch of salt.
Stir-fry for 5-7 min.
Set aside.
4 Fry vegetables
Meanwhile, heat a second large pan over a medium-high heat with a drizzle of oil.
Once hot, add the babycorn with a pinch of salt.
Fry for 2-3 min.
Add the snowpeas, springonions, and sesameseeds.
Fry for 2-3 min further.
Transfer the vegetables to a plate.
Wipe and reserve the pan.
5 Fry prawns
Drain the prawns on kitchen paper.
Heat the reserved large pan over a medium-high heat with a drizzle of oil.
Once hot, add the prawns with a pinch of salt.
Fry for 2-3 min until pink and cooked through.
Add the sauce.
Fry for a further 1-2 min until it's thick and sticky.
Tip!For a thinner sauce, add a splash of water at the end and mix well.
6 Serve
Serve the Sticky HoisinPrawns with BabyCorn, Snow Peas, and CauliflowerRice.
Garnish with the fresh coriander and reserved springonion greens.
