Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep sauce
In a large bowl, whisk the sweetsoysauce, srirachasauce(spicy!), ricevinegar, gingergarlicpaste, peanut butter and tamari.
This is your stir-frysauce.
2 Prep vegetables
Separate the broccoli into small florets.
Clean the mushrooms and chop or roughly tear them.
Trim and finely slice the springonions.
3 Fry mushrooms
Heat a pan over a medium-high heat with a drizzle of oil.
Once hot, add the mushrooms with a pinch of salt.
Fry for 7 min or until browned.
4 Boil noodles
Meanwhile, bring a pot of salted water to the boil.
Add the noodles and broccoli and cook for 3 min.
Reserve 50 ml noodle cooking water.
Drain.
5 Toss
Add the noodles, broccoli, cashewnuts and stir-frysauce to the mushrooms along with the reserved noodle cooking water and stir-frysauce.
Toss until well coated.
6 Serve
Remove the pan from the heat and drizzle the noodles with the sesameoil.
Serve the Stir-fried StickyGingerSesameNoodles topped with springonion, sesameseeds and a pinch of chilliflakes(spicy!).
