Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep sauce

1 Prep sauce

  • In a large bowl, whisk the sweet soy sauce, sriracha sauce (spicy!), rice vinegar, ginger garlic paste, peanut butter and tamari.
  • This is your stir-fry sauce.
Prep vegetables

2 Prep vegetables

  • Separate the broccoli into small florets.
  • Clean the mushrooms and chop or roughly tear them.
  • Trim and finely slice the spring onions.
Fry mushrooms

3 Fry mushrooms

  • Heat a pan over a medium-high heat with a drizzle of oil.
  • Once hot, add the mushrooms with a pinch of salt.
  • Fry for 7 min or until browned.
Boil noodles

4 Boil noodles

  • Meanwhile, bring a pot of salted water to the boil.
  • Add the noodles and broccoli and cook for 3 min.
  • Reserve 50 ml noodle cooking water.
  • Drain.
Toss

5 Toss

  • Add the noodles, broccoli, cashew nuts and stir-fry sauce to the mushrooms along with the reserved noodle cooking water and stir-fry sauce.
  • Toss until well coated.
Serve

6 Serve

  • Remove the pan from the heat and drizzle the noodles with the sesame oil.
  • Serve the Stir-fried Sticky Ginger Sesame Noodles topped with spring onion, sesame seeds and a pinch of chilli flakes (spicy!).
