Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast vegetables
Preheat the oven to 200°C/180°C fan and line a tray with baking paper.
Slice the potatoes into wedges (skins on).
Deseed and slice the redpepper into quarters.
Peel away the husk or outer layer of the corn and discard.
Using foil or baking paper, create an open parcel for the corn, and add the butter, a small splash of water, and the lemonpepperseasoning.
Add all the vegetables to the baking tray with a small drizzle of olive oil, salt, and pepper.
Roast for 35-40 min until the vegetables are cooked through.
2 Marinate prawns
Meanwhile, peel and finely chop the garlic.
Pick and finely chop the parsley.
In a bowl, combine a small drizzle of olive oil, garlic, fajitaseasoning, smokedpaprika, half the parsley (reserving the rest for the sauce), and a good pinch of cajunspice(spicy!).
Add the prawns and mix to combine.
Set aside to marinate.
3 Fry steak
Pat the steaks dry with kitchen paper.
Rub with oil and season with salt.
Heat a large pan over high heat. Once very hot, fry the steaks for 2-4 min on each side until cooked as preferred.
Transfer the steaks to a plate and leave to rest. Season generously with pepper, and cover with foil to keep warm.
Discard most of the oil in the pan, but reserve some to fry the prawns.
4 Fry prawns
Fry the prawns for 2-3 min until mostly cooked through.
Set aside on a plate, and reserve the pan.
5 Make sauce
Slice the lime in half.
Add the creamcheese, measured water, and cook the sauce until thickened.
Add the prawns to the sauce, and cook for 1-2 min further to warm through.
Stir in the remaining parsley.
Add a small squeeze of lime juice to taste.
6 Serve
Being careful, cut the corn in half using a sharp knife.
Serve the Surf 'n' Turf with the Roasted Vegetables and Corn on the side.
