Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate chicken
Slice the lime into wedges.
Slice the chicken into long strips.
In a large bowl, combine the chicken, vegetable oil, fajitaseasoning, oregano, coriandercuminpowder, smokedpaprika, brownsugar, salt, pepper, and a good squeeze of lime.
2 Prep
Meanwhile, drain and rinse the corn and redkidneybeans.
3 Prep vegetables
Deseed and finely chop the redpepper.
Finely chop the tomatoes.
Trim and finely chop the springonion.
Pick and chop the coriander.
4 Fry
Heat a large pan with a drizzle of oil over a medium high heat.
Fry the chicken for 5-7 min until browned.
Add a splash of water in between to loosen.
Tip!If using an air fryer, preheat to 200°C. Add the chicken with a drizzle or spray of oil and air fry for 9-11 min until cooked through.
5 Make salad
In a large bowl, combine the mayonnaise, tacoseasoning(spicy!), and another squeeze of lime juice.
Add the corn, redkidneybeans, springonion, redpepper, tomatoes, and freshcoriander.
Mix well to combine.
Season with salt and pepper to taste.
Tip!If cooking for kids, leave the taco seasoning out as it could be slightly spicy.
6 Serve
Serve the Tex-Mex Chicken Strips with Cowboy Caviar with the Corn Chips.
Garnish with any remaining lime wedges.
