Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil pasta
Bring a large pot of salted water to the boil.
Once boiling, add the pasta and cook for 8-10 min until 'al dente' or cooked to your liking.
Drain and reserve a cup of pastawater.
2 Make coleslaw
Peel and grate the carrot.
Finely shred the cabbage.
In a bowl, combine the carrot and cabbage with the vinegar and a pinch of salt.
Mix to combine and place in the fridge to chill.
3 Make chipotle beans
Drain and rinse the pintobeans.
In a small sauce pot, combine the beans with the brownsugar, smokedpaprikapowder, a pinch of chipotlepowder(spicy!), a pinch of salt, and the measuredwater.
Bring to a boil, then lower the heat to low, and gently simmer until thickened.
Cover and keep warm.
4 Cook BBQ beef
Heat a non-stick pan over a medium heat with a small drizzle of oil.
Once hot, add the bottom of the burgerbuns down and toast until golden and crispy.
Set aside.
Add another drizzle of oil, add the pulled beef and fajitaseasoning, and fry for 2-3 min.
Stir in the barbecuesauce with a splash of water.
Cover and keep warm.
5 Make mac'n'cheese
Meanwhile, heat a large non-stick saucepan over medium heat.
Once hot, add the butter, flour, and 0.5 stockcube and cook, stirring continuously until a sandy paste has formed.
Gradually whisk in the milk and cook for 1-2 min further or until the sauce has thickened.
Remove the pan from the heat and add the gratedcheddar, and dijon mustard. Stir until smooth.
Add the cooked pasta and stir through.
Top with the crispyonions.
Tip!If the sauce is too thick, add a splash of the reserved pasta water.
6 Serve
Serve the BBQ PulledBeef on ToastedBuns.
Serve with the Mac'n'Cheese, Coleslaw, ChipotleBeans, and Gherkins alongside.
