Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • If using an oven, preheat to 220°C/200°C fan.
  • If using an air fryer, preheat to 200°C.
  • Trim the tough top and bottom of the lemongrass and discard the outer layer.
  • Finely chop the lemongrass.
  • Zest and cut the lime into wedges.
  • In a bowl, combine the lemongrass, lime zest, chilli garlic sauce, ginger garlic paste, brown sugar, half of the lime juice, half of the soy sauce and olive oil.
  • Add the chicken wings to the marinade and coat well.
Tip! Have spare time? Marinate the chicken wings 12-24 hours before cooking.
If using an oven

  • Place the chicken wings onto a lined baking tray.
  • Roast for 15-20 min or until the chicken wings are golden-brown and sticky.
Tip! Having a barbecue? Place the chicken wings over an indirect heat and grill for 10-15 min, turning occasionally.
If using an air fryer

3 If using an air fryer

  • Place the chicken wings in a lined air fryer basket.
  • Air fry for 12-15 min or until the chicken wings are golden-brown and sticky.
Tip! Be careful not to overcrowd your air fryer basket - air fry them in batches instead.
Make dip

4 Make dip

  • In a small bowl, combine peanut butter, rice vinegar, honey, measured water and remaining soy sauce and lime juice.
  • Mix until smooth and creamy.
Tip! Add more water for a thinner dipping consistency.
Serve

5 Serve

  • Serve the Thai Lemongrass Chicken Wings hot, with Sweet Peanut Dip on the side.
