Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast fries and peppers
Preheat the oven to 225°C. Brush sweet potatoes carefully, or peel them. Cut to french fries. Coat with olive oil. Transfer to an oven tin lined with baking paper. Cut each bell peppers to 2–3 big chunks. Place on the tin, skin side up. Roast for 25–30 minutes until well browned. Season the sweet potatoes with salt, and the peppers with salt and pepper.
2 Cook onions
Meanwhile, peel brown onions and cut to thin rings. Heat oil in a pan over high heat. Fry onion rings for 5–7 minutes until browned. Reduce the heat to low, add salt, and let the onions stew on the pan, stirring occasionally, until fully softened and caramelized, about 10 minutes. Keep warm.
3 Fry patties
Heat a little bit of oil in a pan over medium high heat and fry the vegan burger patties for about 2–3 minutes. Flip and top with vegan mozzarella. Fry for about 2–3 more minutes until "medium" and juicy. Keep warm. You can also cook the patties on a preheated grill / barbecue / braai.
4 Assemble burgers
Heat up the burger buns. Quickly rinse and pat dry lettuce leaves. Cut tomatoes to thin slices. Smear the burger bun halves with ketchup. Layer the lettuce leaves on the bottom, followed with roasted bell pepper, the cheese covered patty, some caramelized onion, some more roasted pepper and a few tomato slices. Serve with sweet potato oven fries on the side.
