Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make sauce
Finely chop the basil. Heat a pot over a medium heat. Add the tomato passata, garliconionpowder, 0.5 stockcube, brownsugar and basil. Reduce the heat to low and simmer for 10 min (add a splash of water if it gets too thick).
2 Prep toppings
Meanwhile, grate the Parmesan. Quarter the cherrytomatoes. In a salad bowl, combine the vinegar, Dijon, honey, a pinch of salt and pepper with a drizzle of oliveoil. Add the rocket and toss.
3 Top
Fold a tortilla in half, then in half again to divide it into 4 equal quadrants. Cut a line between the two lower quadrants from the center to the edge so you have a single slit in the tortilla. Add the tomatosauce. and cherrytomatoes to the top left, add parmesan and mozzarella to the top right. Add rocket to the bottom right (See the picture). Repeat.
4 Fold
Fold the bottom left that is empty over the top left with sauce and tomatoes. Fold to the right over the one with cheese and fold down over the quadrant with rocket. Repeat. This is your tortillapizza wraps.
5 Fry
Heat a pan over a medium heat with a drizzle of oil. Fry the tortillapizza wraps on both sides for 30 sec to 1 min or until browned. Repeat.
