Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil potatoes

1 Boil potatoes

  • Chop the potatoes (skins on) into bite-sized pieces. Add to the pot and cook for 12-15 min or until tender.
  • Drain, mix with potato seasoning, olive oil, and white balsamic vinegar.
  • Set aside in the fridge to chill.
Prep

2 Prep

  • Meanwhile, drain the sweet corn.
  • Drain the tuna.
  • Peel and finely chop the onion.
  • Finely chop the gherkins.
  • Pick and chop the dill.
  • Slice the lemon in quarters.
Mix

3 Mix

  • In a bowl combine the mayonnaise and a good squeeze of lemon.
  • Mix in the tuna, sweet corn, gherkins, dill and onion (to taste).
Tip! If cooking for kids, or sensitive to onions, leave it out or use only a small amount.
Make crudites

4 Make crudites

  • Peel and slice the carrots and cucumbers into sticks.
  • Separate the leaves of the gem lettuce.
Warm Pitta

5 Warm Pitta

  • Warm the pitta in the oven, microwave, or in a pan.
Serve

6 Serve

  • Slice the pitta in half and layer with gem lettuce and scoops of the tuna filling.
  • Serve the Tuna and Sweetcorn Pitta Sandwiches with Potato Salad and Crudites to the side.
