Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil pasta
Bring a large pot of salted water to the boil.
Add the macaroni.
Boil for 8 min or until 'al dente'.
Drain.
2 Prep
Grate the maturecheddar and Parmesan.
Chop the beefbacon into small bite-sized pieces.
Heat a frying pan over medium-high heat.
Fry the bacon for 6-8 min until crispy.
Remove from the pan and set aside on a paper towel-lined plate.
Tip!Retain the bacon grease for adding to the cheese sauce for an extra bacony flavour.
3 Make sauce
Heat a separate pot over medium heat with the butter and flour.
Cook, stirring, for 1 min or until a sandy paste has formed.
Gradually whisk in the milk and cook for 5 min or until thickened.
Mix in the vegetable seasoning, garliconionpowder, dijonmustard, maturecheddar, orangecheddar and half of the Parmesan.
Tip!The sauce is thick when it coats the back of a spoon.
4 Grill
Preheat the grill to medium-high.
Add the cooked macaroni and cooked bacon to the sauce pot.
Mix to combine with the sauce and season with blackpepper to taste.
Transfer to an oven-proof baking dish.
Top with the pankobreadcrumbs and the remaining Parmesan.
Place under the grill for 5-8 min until golden and bubbling.
Tip!Don't have a grill, bake the mac and cheese in the oven at 180°C for 10-15 min until the top is golden.
5 Make salad
In a large bowl, combine the balsamicvinegar, honey and olive oil with a pinch of salt and pepper (make the dressing in a separate small box if consuming later).
Chop the Romainelettuce into bite-sized pieces.
Chop the tomatoes in half.
Chop the cucumber into small bite-sized pieces.
Place the salad in the bowl and toss to coat in the dressing.
Tip!If cooking for kids, leave some of the lettuce, tomatoes and cucumber separate.
6 Serve
Serve the Bacon Mac and Cheese with the Side Salad alongside.
